2 Ingredient Spice Cake

Need a quick and easy treat? Grab a can of soda and a box of cake mix and you can make this easy 2 ingredient spice cake! Seriously, this is so simple that anyone can make it. The carbonation helps the cake rise and become fluffy without any other ingredients. Perfect for fall, it’s got all those classic aromatic spice flavors. Great for dessert or to serve at brunch with a cup of coffee.

Ingredients and Instructions

As mentioned, you only need two ingredients!

Here are my product recommendations:

  • Soda – I recommend using Olipop crisp apple soda, because the apple flavor pair so well with spices like cinnamon and cloves in the cake mix. A can of ginger ale from any brand also works! Sparkling apple cider (must be sparkling; the carbonation is important!) can also be used.
  • Cake mix – I used Ducan Hines Signature Spice Cake Mix and recommend sticking with this. If you can’t find it, you can try subbing another cake mix, but try to look for a box that has the same amount of cake mix (they can vary quite a bit from brand to brand).

Once you’ve got your two ingredients, pour them both in a bowl and stir together until the mixture is just combined and there are no more large lumps of dry cake mix (a few small lumps are fine).

Divide that into two greased 8-inch round cake pans, bake it at 350 degrees F for about 18-20 minutes, and boom – a delicious treat awaits!

Can I make other flavor 2-ingredient cakes?

Yes! You can try a box of chocolate cake mix with a can of Coca Cola, a box of lemon cake mix with a can of lemon-lime soda, or a box of carrot cake mix with a can of ginger ale. Feel free to test out a few options and get creative!

Ingredients

  • 15.25 oz box Ducan Hines Signature Spice Cake Mix (or another boxed spice cake mix)
  • 12 oz can Olipop Crisp Apple Soda (or ginger ale or sparkling cider)

Instructions

  1. Preheat the oven to 350 degrees F. Grease two 8-inch-round cake pans.
  2. In a mixing bowl, stir together the cake mix and soda until just combined.
  3. Divide the mixture between the two cake pans. Bake both pans on the center rack at 350 degrees F for 18-20 minutes, until a toothpick pulls clean from the center. Let cool in the pan, then enjoy!
