Ingredients

  • 1 1/2 cups unsweetened almond milk or oat milk
  • 1 1/2 tbsp fresh lemon juice
  • 2 large eggs
  • 3 tbsp canola oil or any oil of your choice
  • 2 tbsp sugar
  • 1 tsp vanilla extract
  • 1 3/4 cups all-purpose flour
  • 2 tsp baking powder
  • 1/2 tsp salt

Instructions

  1. In a liquid measuring cup, combine the almond milk and lemon juice and let sit for 5 minutes.
  2. In a large bowl, whisk together the eggs, oil, sugar, and vanilla. Add the almond milk mixture and whisk to make sure everything is well combined. Stir in the flour, baking powder, and salt.
  3. Heat a Belgian waffle iron. When hot, pour in about 3/4 cup of batter, then close the iron. Cook according to the manufacturer’s directions (most have a light that turns on when done), usually 3 to 5 minutes each, or until the waffles are golden brown and crisp.
