Ingredients

  • ½ cup dairy-free butter, softened (or regular butter if you are not dairy free)
  • cup granulated sugar
  • ¼ cup brown sugar
  • cup pure Grade A dark maple syrup
  • 1 large egg
  • 1 tsp vanilla extract
  • 1 ¾ cup all-purpose flour
  • 1 tbsp cornstarch
  • ½ tsp baking soda
  • tsp baking powder
  • ¼ tsp salt
  • 1 cup dairy-free dark chocolate chips

Instructions

  1. Preheat oven to 350 degrees F. Line two baking sheets with parchment paper.
  2. In a bowl, cream together the dairy-free butter, granulated sugar, and brown sugar.
  3. Add the maple syrup, egg, and vanilla, and mix until well combined. (It may look a little “broken” when adding cold maple syrup to the butter mixture; this is normal.)
  4. In another mixing bowl, combine the flour, cornstarch, baking soda, baking powder, and salt. Stir well.
  5. Add the dry ingredients to the wet ingredients and mix until just combined. Fold in the chocolate chips.
  6. Use a cookie scoop or heaping tablespoon to portion the cookies onto the parchment-lined baking sheets. Bake at 350 degrees F for 10-12 minutes. Let cool on the pan, then enjoy!
