Ingredients

  • 1 ½ cups all-purpose flour (spooned and leveled)
  • ½ cup unsweetened cocoa powder
  • 1 tsp baking powder
  • ½ tsp baking soda
  • ¼ tsp salt
  • 2 large eggs
  • ½ cup vegetable oil
  • ¾ cup granulated sugar
  • cup almond milk (plain or vanilla)
  • cup vanilla dairy free yogurt (or a 5.3 ounce container)
  • 1 tsp vanilla extract
  • 1 cup dairy-free chocolate chips

Instructions

  1. Preheat the oven to 350 degrees F. Grease a muffin tin with cooking spray or oil (or use paper muffin liners).
  2. In a mixing bowl, combine the flour, cocoa powder, baking powder, baking soda, and salt. Stir well and set aside for now.
  3. In another mixing bowl, combine the eggs, oil, sugar, almond milk, dairy-free yogurt, and vanilla. Whisk until well combined.
  4. Pour the dry ingredients into the bowl with the wet ingredients. Stir until combined. Fold in the chocolate chips.
  5. Portion the muffin batter into the prepared muffin tin. Bake at 350 degrees F for 17-21 minutes, or until the a toothpick pulls out clean from the center. Let cool for a ten minutes, then enjoy!

Recipe Notes

  • These are moderately sweetened; if you prefer a very sweet muffin recipe, increase the sugar to 1 cup.
  • The batter will be on the thicker side; this is normal.
