Dairy Free Chocolate Chip Pancakes

These fluffy dairy free chocolate chip pancakes are perfect for a fun weekend breakfast! Browning the dairy-free butter for the batter adds extra flavor.

Ingredients

  • ¼ cup salted dairy-free butter (i.e. Country Crock Plant Butter Sticks with Avocado Oil, ½ stick)
  • ¼ cup granulated sugar
  • 1 large egg
  • 1 ½ cups oat milk
  • 1 ¾ cups all-purpose flour
  • 1 ½ tablespoons baking powder
  • ¼ teaspoon salt
  • 1 ¼ cups dairy-free chocolate chips (i.e. Enjoy Life)

Instructions

  1. In a small saucepan over medium heat, melt the dairy-free butter. Stir regularly until the butter starts to develop an amber color (watch carefully, you don’t want it to burn). Remove from heat and let cool for 5 minutes.
  2. In a large mixing bowl, whisk together the butter, sugar, egg, and oat milk until well combined.
  3. Add the flour, baking powder, and salt. Stir until combined, scraping along the sides and bottom of the mixing bowl to make sure no hidden pockets of dry flour remain unincorporated.
  4. Fold in the chocolate chips (or alternatively, you can sprinkle on the chocolate chips on later after portioning the batter in the griddle/pan).
  5. Heat a griddle or large pan over medium heat. If using a griddle, there is typically no need for greasing. If using a pan, add a little butter or nonstick cooking spray.
  6. Pour ¼ cup portions of pancake batter onto a griddle or into the pan. Let it cook for about 2-3 minutes, or until bubbles begin to pop on the surface of the batter. Use a spatula to flip the pancake and let it cook on the other side for another 2-3 minutes. Repeat with the remaining batter.
  7. Serve as desired – extra dairy-free butter and maple syrup are great on top. Enjoy!

Recipe Notes

  • Feel free to add more or less chocolate chips according to preferences. Regular morsels or mini chocolate chips both work.
  • You can mix the chocolate chips right into the batter, or you can sprinkle them on after you’ve poured the batter onto the griddle or skillet. The first is a little easier but can result in some uneven pockets of chocolate chips.
