Ingredients

  • ½ cup refined coconut oil, softened
  • 1 cup granulated sugar
  • 1 large egg
  • 2 teaspoons vanilla extract
  • 1 ¾ cups all-purpose flour
  • 1 teaspoon baking soda
  • ¼ teaspoon salt
  • ½ cup sprinkles (optional; double check to ensure dairy-free)

Instructions

  1. Preheat the oven to 350 degrees F. Line two baking sheets with parchment paper.

  2. In the bowl of a stand mixer (or using a mixing bowl with a hand mixer), combine the coconut oil, sugar, egg, and vanilla.
  3. In another mixing bowl, combine the flour, baking soda, and salt.
  4. Add the dry ingredients to the wet ingredients and stir until just combined. Fold in the sprinkles (if using).
  5. Portion onto the prepared baking sheets using a 1 ½-tablepsoon cookie scoop, or heaping tablespoons. Bake at 350 degrees F for 8-11 minutes, or until cooked throughout. Let cool on the pan, then enjoy!
