Ingredients

  • 2 cups almond flour
  • 2 tbsp corn starch
  • ½ tsp baking soda
  • ½ tsp salt
  • ½ cup refined coconut oil, melted
  • ½ cup brown sugar, packed
  • 1 large egg
  • 2 tsp vanilla extract
  • cup dairy-free chocolate chips (i.e. Enjoy Life)

Instructions

  1. Preheat the oven to 350 degrees F. Grease an 8x8 baking dish.
  2. In a mixing bowl, combine the almond flour, corn starch, baking soda, and salt.
  3. In another large mixing bowl, combine the coconut oil, brown sugar, egg, and vanilla extract. Whisk until well combined.
  4. Pour the dry ingredients into the wet ingredients, and stir until combined. Fold in the chocolate chips.
  5. Pour the batter into the baking dish and spread evenly. Bake at 350 degrees F for 20-25 minutes, or until a toothpick pulls clean from the center. Let cool completely in the pan before slicing into nine squares. Enjoy.

Recipe Notes

  • If you attempt to slice these before cooling completely, the bars will crumble. You must let them cool completely.
