Dairy Free Peanut Butter Cookies

These dairy free peanut butter cookies are so easy to make – just four ingredients and flourless!

Ingredients

  • 1 cup creamy peanut butter
  • 1 cup granulated sugar
  • 1 teaspoon vanilla extract
  • 1 large egg

Instructions

  1. Preheat the oven to 350 degrees F. Line two baking sheets with parchment paper.
  2. In a large bowl, combine the peanut butter, sugar, vanilla, and egg. Using a stand mixer or hand mixer, beat until well combined.
  3. Use a small cookie scoop (or a spoon) to portion out the dough on the baking sheets. Use a fork to press down on each cookie, flattening and making a crisscross pattern.
  4. Bake at 350 degrees F for 10-12 minutes, or until cooked through and lightly browned.
  5. Let cool on the baking sheet for 5 minutes, then transfer to a wire rack to finish cooling. Enjoy!

Recipe Notes

  • Do not overbake or cookies will be hard and bottoms may burn.
  • Optionally, you can sprinkle a little extra granulated sugar on the cookies if you’d like. It gives it a festive look for the holidays.
