Ingredients

  • 1 tablespoon olive oil
  • 1 pound 90% lean ground beef (or any ground meat you prefer)
  • 1 medium yellow onion, diced
  • 1 teaspoon onion powder
  • 1 teaspoon garlic powder
  • 1 teaspoon paprika
  • ½ teaspoon salt
  • ½ teaspoon Italian seasoning
  • ½ teaspoon black pepper
  • 1 tablespoon Worcestershire sauce
  • 10 oz can diced tomatoes with green chilies
  • 2 ½ cups beef broth
  • 2 ½ cups dry cavatappi noodles
  • 1 ½ cups shredded dairy-free cheddar cheese (recommend Violife)
  • 4 oz dairy-free sour cream (recommend Tofutti)
  • Fresh parsley, chopped for garnish (optional)

Instructions

  1. Heat olive oil in a large sauté pan over medium heat.
  2. Add the ground beef and diced onion. Cook about 6-8 minutes, breaking up the meat as it cooks, until meat is no longer pink and onions are tender. Drain if needed.
  3. Add onion powder, garlic powder, paprika, salt, Italian seasoning, black pepper, and Worcestershire sauce. Cook, stirring frequently, for 1 minute.
  4. Add the diced tomatoes with green chilies, beef broth, and noodles. Stir to combine and bring to a boil. Cover the sauté pan with the lid and reduce heat to medium-low. Let it cook for 15 minutes or until the pasta is cooked and most of the liquid is absorbed.
  5. Add in the dairy-free cheddar cheese and dairy-free sour cream. Stir until combined. Cook on low for 1-2 minutes, or until the sauce has thickened.
  6. Garnish with chopped fresh parsley (if using). Serve immediately.

Recipe Notes

  • A sauté pan has a flat bottom and tall straight sides, which makes it ideal for this recipe. If you don’t have a large sauté pan, use a large pot instead.
  • Feel free to substitute other similar sized pasta for this recipe, like penne, rigatoni, farfalle, and cavatelli.
