Ingredients

  • ½ cup dairy-free butter, softened (i.e. Country Crock plant butter with avocado oil or Earth Balance sticks)
  • ½ cup granulated sugar
  • ½ cup brown sugar
  • 1 large egg
  • 1 tsp vanilla extract
  • 1 ½ cups all-purpose flour
  • ½ tsp baking soda
  • ¼ tsp salt
  • ¾ cup dairy-free chocolate chips (i.e. Enjoy Life)

Instructions

  1. Preheat the oven to 350 degrees F. Line two baking sheets with parchment paper.
  2. In a large bowl, cream together the butter, granulated sugar, and brown sugar (using either the paddle attachment of a stand mixer or a hand mixer).
  3. Add the egg and vanilla extract. Mix until well combined.
  4. In a small bowl, combine the flour, baking soda, and salt. Stir to evenly distribute the dry ingredients, then pour them into the bowl of wet ingredients. Mix until just combined.
  5. Fold in the chocolate chips.
  6. Use a small cookie scoop or heaping tablespoon to portion the dough onto the parchment-lined baking sheet. Bake at 350 degrees F for 10-12 minutes.
  7. Remove from the oven and let cool on the pan. Enjoy!
